What a wonderful experience at this pop up. I'd say get yourself there because the chef is going places with the way he cooks. $65 for the meal was a steal and I am sure reservations will be harder to get and prices will go up so book your seats now. The chef had the visuals and flavors down and plays with textures throughout the tasting.
I can still taste the celtuce with the granita and crackling toasted rice; and I so wish I can have that amazing final course for dessert everyday--the most creamy panna cotta and delectable basil genoise cake. You know he is dedicated when our table mate, who knows him from previous work, told us that the chef spent 14 hours straight tweaking to perfect the genoise cake that one day he called to chat. And who know how many hours he spent before that?! There was even a bread course and I gobbled up both portions of the take home pecans without sharing (not sorry).
The servers were super nice and the whole operation was very well run and organized, much like seasoned operators. Being inside a pizza shop was fun as well: there were people who stumbled in during dinner looking for a slice not realizing it was a pop up dinner affair.
